These grapes were harvested on the same day using sparkling parameters, 17.5-18 Brix, with bright acidity, whole cluster pressed and co-fermented to make this white wine.  As with our earlier Pet Nat’s, the ferment started wild in tank and finished in bottle, and no additives were used.  It's bone dry, has completed malolactic, and bottled with lees, so is soft on the palette and finishes very refreshing due to lower alcohol at 10%.
